Restaurant knowledge you should know

This month has been the hardest task for me when it comes to the details of owning my own business. About 6 weeks ago, I bought an eating establishment. This was a really big deal for me. I don’t even own a condo on my own, however here I bought a business! I have been a chef for over a decade. I have worked for the best of the best. I was ready to make a leap out on my own. I had a really particular cuisine that I prepared. It was not for everyone, although I knew there were enough that would follow me. I have re-designed a seasoned, old building on the water. I was doing absolutely well, until it came to installing an Heating, Ventilation and A/C system. This was my biggest pet peeve in sites I had already cooked. No one person could ever get the heating and a/c just the way a chef needs it in her family room. There was a really good balance a chef had to juggle with a/c as to not spoil the food. But, a family room did in fact need some type of a/c with the ovens and burners going at the speed of light. I had brought in multiple different Heating, Ventilation and A/C providers. They all said the same. And, nobody said what I wanted to hear. I was nearly about to provide up and settle for the basic Heating, Ventilation and A/C component they were offering. Then, a young woman walked into my eating establishment. She looked barely out of high school! She heard I was having concerns. She had just had graduated from a Heating, Ventilation and A/C internship program and had some fresh ideas. I was enthusiastic to provide her a shot!
